Most spring water is bicarbonate-dominant and finishes soft and round. This shelf is the other kind: sulfate (from gypsum) and chloride outweigh the bicarbonate in milliequivalents, and the finish turns dry — a brut edge, faintly bitter in quantity, prized at the dinner table.
