The Aperitif
Light bubbles over a clean slate. The opening remark of a good evening.
Sparkling but barely mineral, squeaky clean with a soft landing. The fizz does the talking and the water stays out of the way.
Underneath the gas this is light calcium bicarbonate chemistry, under the 250 mg/L body line, so nothing competes with the bead. Carbonation adds its own gentle acidity, which is where the brightness comes from.
Pour it before dinner, when the palate is clean and the conversation is not yet. It does the job of the drink it is named for, minus the regret.
