When the water shaped the people.

For two thousand years, writers claimed a spring could set the health and temper of everyone who drank from it. Sometimes the chemistry backed them up.

Does the water a people drink shape who they are? Not just their health, but their build and their temperament, and the reputation that trails them among their neighbours? It sounds like folklore, and often it was. But the idea that a spring stamps something onto everyone who drinks from it is one of the oldest in the written record, and every so often the chemistry turned out to agree.

Water as a maker of peoples

The clearest early statement is the Hippocratic treatise Airs, Waters, Places, from around the fifth century BCE. It tells a doctor arriving in an unfamiliar town to study the water before anything else, whether it runs soft off the marsh, hard off the rock, or brackish from the coast, because in this reading water governs the health, the physique and even the mood of the locals. Then it does something bolder and stranger. It scales the claim up to whole nations, arguing that the mild, unchanging waters of the east bred a softer and more yielding people, while the harsher, swinging conditions of Europe bred a spikier and more warlike one.

The Romans were more practical about it. Vitruvius gave a whole book of his architecture manual to water and told the reader, in all seriousness, to judge a spring by the complexions of the people who lived on it. He catalogued sulfurous and bituminous waters, the swollen throats of Alpine villagers, the grey pallor of men who worked with lead. Pliny filled pages of his Natural History with springs reputed to heal, to intoxicate, to turn things to stone, or to unsettle the mind.

The grand version of the theory, that climate and water set the character of whole nations, ran on through Galen and medieval geography into Montesquieu in the eighteenth century. It aged badly, and it is worth saying so plainly. It slid too easily into environmental and racial determinism, and it is discredited now. What survives is the smaller, testable claim, that a particular water can carry something real that marks the people who drink it. That one has legs.

When the folklore turned out to be chemistry

The strongest case is a modern one. In the early 1900s a dentist named Frederick McKay puzzled over residents of certain Colorado towns whose teeth were oddly mottled and brown, yet strikingly resistant to decay. The local name for it was Colorado brown stain. Decades of work traced it to naturally high fluoride in the water, and that finding is the direct ancestor of water fluoridation. A folk hunch with a real chemical cause underneath it, and a mechanism that held up completely.

Iodine tells a similar story with a caveat. Goiter, and the developmental harm that follows severe deficiency, clustered for centuries in iodine-poor mountains and inland plains, from the Alps to the corner of England where the swelling was simply called Derbyshire neck. The tie to the local ground was real. The honest qualifier is that iodine reaches people mostly through soil and food, with water only one link in the chain, so it is a little less a pure water case than fluoride, where the fluoride sits in the water itself.

Where the water carried a poison, the grim reputation was usually earned. Wells naturally high in arsenic scar the skin and raise cancer rates, which gave the Silesian mining town of Reichenstein its own named disease long before anyone could explain it, and gave modern Bangladesh the largest mass poisoning in history through millions of tainted tube wells. Nitrate off the farmland can turn an infant blue by starving its blood of oxygen, a condition pinned down in 1945 and still called blue baby syndrome. It is why our baby-safe collection screens nitrate hard, and why the nitrate ranking and the number we call virginality exist at all.

The purgative springs were honest too. The bitter water at Epsom genuinely loosens the bowels, because it is magnesium sulfate, and the old reputation was just a plain description of what it did. The same salt does the same job in a bottle today. Hépar is sold in France more or less on that promise, the whole dry-finish shelf is built on sulfate, and Slovenia’s Donat Mg is still drunk by the small glass for a sluggish gut.

A step down sit the cases where the chemistry is real and the old use was at least pointing the right way. Iron-rich chalybeate springs like Trefriw in Wales were prescribed for the iron-deficiency anemia of young women, then called green sickness, and iron does treat exactly that. The sulfur springs at Harrogate and Aachen were used for skin complaints, and sulfur remains a real dermatological agent. A bottle like the treaty-reserved Georgian Indian Springs keeps that tradition, its struck-match nose the entire point.

Some of those cures never stopped. Vichy bottles the savory soda water of its thermal springs as Vichy Célestins, Georgia’s Borjomi and Russia’s Essentuki are drunk for the stomach under old Soviet medical rules, and the Belgian town of Spa, which handed its name to every spa on earth, sends out the near-weightless Spa Reine.

Then the tantalising tier, where the correlation refuses to either firm up or go away. Lithia waters were sold for calm nerves, and lithium was an original ingredient in 7UP. The natural doses were mostly too small to matter, yet study after study keeps finding trace lithium in drinking water tracking with lower suicide rates. Soft-water regions, in the same vein, have shown slightly higher heart-disease mortality since the 1950s, perhaps for want of magnesium or calcium, which is one reason a high-magnesium water draws attention it may or may not deserve. Suggestive, not settled, and we would rather say so.

Real chemistry, wrong promise

One group is worth keeping as a warning. The springs at Bad Gastein, Misasa in Japan and Ramsar in Iran genuinely are radioactive, and early last century that was marketed as invigorating. The reputation tracked a real property of the water. The benefit was mostly illusory, and at the extreme it was lethal, since the same radium craze produced the tonic that killed the American socialite Eben Byers in 1932. A water really being rich in something is never the same as that something being good for you. It is why we describe what is in the glass and leave the cures alone.

Springs that bred their own legends

Where the chemistry was vivid enough, people made myth of it directly. At Glastonbury the iron-rich Chalice Well runs rust red and became the Blood Spring of Grail legend, set against a chalk-white spring beside it. The hot springs at Bath were sacred to the British goddess Sulis, whom the Romans folded into their own Minerva. Holy wells across Britain and Ireland were each given a saint and a specific cure, for the eyes, the skin, the barren. The Greeks handed particular waters powers of the mind, poetic inspiration at the Pierian Spring, prophecy at Castalia below Delphi, forgetting and remembering at Lethe and Mnemosyne. Herodotus even recorded a fountain of long life among a people at the edge of the known world, the seed of every Fountain of Youth to come.

The same instinct, minus the myth

What all of it shares is a habit older than chemistry, of reading a water for what it will do to you and to the people around you. The habit was sound. The explanations were mostly guesswork, some of it lucky. The only real change is that the analysis now exists and can be printed. When we place a bottle in a type or a collection, we are doing the Hippocratic thing, studying the water first, except that we show the number and its source rather than the complexions of the locals.
