The Oyster
Saline, still and entirely unbothered. An acquired taste, happily acquired.
Still, full-bodied, silky and dry, with genuine salinity. The closest bottled water comes to the raw bar.
Sodium and chloride dominate their respective balances, the sodium chloride facies, with the mineral load past the 250 mg/L line. These are old, deep, slow waters, often thermal, that picked up brine on the way.
No one drinks these by accident. They pair with food the way a fino sherry does, and they are wasted on people in a hurry.
