Mountain Valley is the gentle one, TDS 220 built almost entirely of calcium and bicarbonate (67 and 231.7 mg/L) with 2.8 mg/L sodium and 18 of silica, which drinks clean, round and faintly sweet. Topo Chico is close to three times as mineral (TDS 630) and the extra weight is sulfate (180) and sodium (41), so it lands drier, saltier and harder.
Pick Mountain Valley when the sparkling water should stay polite, at dinner or over ice with nothing added. Pick Topo Chico for the bite, the salt and the coarser bubble that made it the pour of choice for a wedge of lime.
